👩‍🍳 Secret Tip ⭐

Never peel and chop the bottle gourd before the batter is ready.

Bottle gourd starts releasing water and may oxidize slightly after cutting. Freshly grinding and immediately adding it to the batter preserves moisture, freshness, natural sweetness and nutrients. This is the secret behind extra soft and moist dhokla.

Preparation

Step 1: Prepare Batter Base

Take a wide mixing bowl.

Add:

2 bowls sooji

1 bowl curd

Mix well.

Add:

½ bowl water

Mix thoroughly until lump-free.

The batter should be thick but flowing.

Cover and rest for 30 minutes.

This resting time helps sooji absorb moisture and become soft.

Step 2: Prepare Steamer

After 30 minutes:

Fill the steamer with 2-3 cups water.

Place it on medium flame.

Allow water to start boiling.

Do this before adding baking soda because once soda is added, the batter should be steamed immediately.

Step 3: Prepare Dhokla Plate

Grease the dhokla plate with:

Oil OR

Ghee

Greasing prevents sticking and ensures smooth removal.

Keep aside.

Step 4: Add Salt

Open rested batter.

Add:

1½ tsp salt

Mix well.

Step 5: Divide Batter

Divide batter equally into:

Part A

Part B

Each portion will make one batch of dhokla.

Step 6: Prepare Fresh Lauki Puree

Now peel the bottle gourd.

Why now?

Because freshly cut lauki retains maximum moisture and freshness.

Cut into small cubes.

Take:

½ cup chopped lauki

Add to mixer jar.

Add:

1-2 tbsp water only if needed

Grind into a smooth puree.

Step 7: Mix First Batch

Immediately add fresh lauki puree into Part A batter.

Why immediately?

Fresh lauki releases natural moisture and nutrients. Delaying may cause water separation.

Mix well.

Add:

¼ tsp baking soda

Gently fold only for 20-30 seconds.

Do not overmix.

Step 8: Steam

Immediately pour batter into greased plate.

Tap gently.

Sprinkle:

Red chilli powder

Place carefully inside hot steamer.

Cover tightly.

Steam on:

🔥 Medium Flame

⏰ 13 Minutes

Important:

❌ Do not open the lid before 13 minutes.

Opening early causes steam loss and dense dhokla.

Step 9: Check Doneness

After 13 minutes:

Insert a toothpick or knife.

If it comes out clean:

✅ Dhokla is cooked.

If batter sticks:

Steam 2 more minutes.

Step 10: Rest

Remove plate carefully.

Allow resting for:

⏰ 5 Minutes

Resting helps set the texture.

Step 11: Cut

Using a knife:

Cut criss-cross diamond shapes.

Tempering

Heat:

1 tbsp oil

on low-medium flame.

Add:

1 tsp mustard seeds

Allow spluttering.

Add:

Curry leaves

Slit green chillies

Hing

Sauté for:

⏰ 20-30 seconds

until aromatic.

Pouring Tadka Correctly

Pour hot tempering evenly over the entire dhokla.

Start from edges.

Move slowly toward center.

This ensures every piece absorbs flavor.

Immediately sprinkle:

Chopped coriander

The hot tempering helps coriander release aroma.

Sooji Dhokla Recipe

Using Remaining Batter

Repeat exactly the same process.

For Second Batch

1. Grind another ½ cup fresh lauki.

2. Add into remaining batter.

3. Add ¼ tsp baking soda.

4. Mix gently.

5. Steam for 13 minutes.

6. Add tempering.

Always add soda just before steaming.

Never add soda to both portions together.
