Friends, today we will make Palak Vadi which is a famous recipe of Maharashtra. It is made from spinach and we should consume spinach in some form or the other. Because eating spinach is beneficial for our body. Eating spinach reduces the risk of infection in the body. Spinach is rich in Vitamin A, Vitamin C, Vitamin K, Magnesium and Iron. Spinach should also be consumed to increase eyesight.

TODAY WE WILL LEARN HOW TO MAKE PALAK VADI. WHICH IS MADE UP OF SPINACH, MULTIGRAIN FLOUR & INDIAN SPICES. THIS IS DELICIOUS, HEALTHY, HIGH PROTEIN & MAKE TO EASY RECIPE .

INGREDIENTS
Ingredients required to make Spinach Roll
1. Spinach (palak) – 1bunch (200gram)
2. Chickpea flour (gram flour) – 1/2 cup (100g.)
3. Rice flour – 1/4 cup (50g.)
4. Maize flour – 1/4 cup (50g.)
5. Sorghum (jowar) flour – 1/4 cup (50g.)
6. White Sesame Seeds (Til) – 1tsp
7. carrom seeds (ajwain) – 1/2 tsp
8. Red chilli powder – 1 tsp
9. Turmeric powder – 1/2 tsp
10. Salt – 1 tsp (as per taste)
11. Lemon juice – 1 tsp
12. Green chilli pest – 1 tsp
13. Oil – 2 tsp
14. Water – 1 tsp
(2 glasses of water for steaming spinach rolls)
Ingredients required for making Palak Vadi
1. Oil – 2 tsp
2. Mustard seeds (Rye) – 1/2 tsp
3. Asafoetida (Hing) – 1/4 tsp
4. Sesame seeds (sesame) – 1 tsp
5. Green chilli – 2 to 3 pieces cut lengthwise
6. Curry leaves – 4 to 5 leaves
7. Green Coriander Finely chopped – 2 to 3 tbsp
8. Lemon – 1
INSTRUCTIONS OF PALAK VADI
1) First of all, after removing the thick stems of spinach, wash the leaves thoroughly with water for 3 to 4 times and drain all the water by keeping it in a sieve, now take out all the necessary ingredients, so that it is easy to make palakwadi ..
2) After draining all the water, finely chop the spinach leaves.
3) Put spinach in a large mixing bowl or parat, then add gram flour, rice flour, maize flour, jowar flour and salt, then crush carom seeds with hands and add.
4) Now add red chili powder, turmeric, sesame, green chili paste, lemon juice and 2 teaspoons of oil to it, mashing all these things with your hands and mix it well.
5) Now add a spoonful of water to this prepared mix and tie it like a dough.
6) Now keep 2 glasses of water in a steamer or kadai to heat it.
7) Till the water is hot, prepare the roll from the dough, to make the roll, first divide the spinach dough into equal 4 to 5 parts and make it in a round shape.
8) Now take oil in your hands and lubricate the hands. Then take a part of the dough and make it like a roll by giving it a cylinder shape with your hands. In this way prepare other rolls as well.
9) Take a steamer plate or any mesh(hole) plate, grease it with oil and keep it on the steamer, then keep the spinach roll on this plate with little space.
10) Keep the flame of the gas in the middle of low to medium and let the steam for 10 to 12 minutes after covering.
11) After 12 minutes, check them with the help of a toothpick, if they are cooked properly, then take them out on a plate and let them cool down.
12) When it cools down completely, its top layer becomes dry well and when these rolls do not stick to the hands at all, that is, the rolls are perfect for cutting well. Cut them as thick as 1 inch.
13) Now heat oil in a pan, add mustard seeds when the oil is hot, add hing, sesame seeds, curry leaves and green chillies when the mustard seeds crackle.
14) Then put the pieces of palak vadi by keeping the gas on medium flame, cook them for 2 to 3 minutes while turning them from both the sides. Then add red chili powder, chaat masala, and green coriander, mix them lightly and turn off the gas immediately.
ADD THE SPINACH VADI PIECES ,TOSS GENTLY & COOK ON A MIDIUM FLAME FOR 2 TO 3 MINUTES
15) Take out the spinach vadi in a plate and serve it by squeezing lemon on top. ,

Suggestion
1) Always wash the spinach leaves first and then cut them, otherwise its nutritional value gets lost in the water .
2) If we do not have maize and jowar flour available, then we can make it from only gram flour and rice flour.
3) Do not use much water while binding the dough, add only one teaspoon of water because spinach already contains water, if you add more water then the dough will not bind well for the vadi.
4) Cut the roll only after it cools down, cutting hot cuts will not be able to cut the vadi well and can also break.

โ The time to make palak vadi can be a little too much according to the thickness of the steam cooker and the intensity of the heat.
