         Green onions are very much liked due to their distinct taste.  Green onions are delicious and rich in many special nutrients.  It is rich in Vitamin A, Vitamin C, Vitamin K and Vitamin B2.  Its consumption also increases immunity power.

       Green onion is used in soups, vegetables, parathas and various other dishes. Today we will make green onion rings,

EQUIPMENTS USED

● HARD ANODIZED WOK / KADAI

● SPOON (LADLE)

● MIXING BOWL / PARAT

● SLOTTED SPATULA

NECESSARY INGREDIENTS

  For making dough

 1) 250g.  Fine flour (all purpose flour / maida)

 2) 50g.  Oil (for moyan)

 3) 1/4tsp black pepper powder

 4) 1/4tsp celery (ajwain)

 5) 1/2 tsp salt (as per taste)

  For stuffing

 1) 250g.  Green onion leaves

 2) 2-3 green chilies finely chopped

 3) 1tsp coriander powder

 4) 1tsp red chili powder

 5) 1/2tsp black pepper powder

 6) 1/2tsp amchur powder

 7) 1/4tsp garam masala powder

 8) 1/4tsp Hing

 9) 1/2 tsp salt (as per taste)

* Warm water for kneading flour – 1/4 cup

* Oil for frying

 INSTRUCTUIONS OF SPRING ONION RINGS

 1) To make spring onion rings, first wash the leafy part of green (spring) onion and cut it finely.  Now put it in a sieve so that all the water gets removed from it.

 2) To knead the dough for the outer layer of the rings, take the flour in a layer, crush the carom seeds by hand, add black pepper, and salt, mix all these things well. Now add oil to this mixture with the help of fingers.  Mix it by mashing it for 3 to 4 minutes, adding water little by little and knead the dough.  (Knead a slightly stiffer dough than paratha dough.)

 DOUGH FOR COVERING RINGS

 3) Apply some oil on the kneaded dough, cover it with a wet muslin cloth or a plate and keep it for 20 to 25 minutes to set.

 4) After 25 minutes, after mashing the dough, divide it into small equal pieces and make balls.

 DIVIDE THE DOUGH INTO SMALL EQUAL PORTIONS & MAKE ROUND SHAPE BALLS

 5) Now prepare the stuffing for the spring onion rings.  Take out the chopped onion leaves in a plate and add green chili, coriander powder, red chili powder, mango powder, black pepper, garam masala, asafoetida and salt and mix it well.

 STUFFING FOR RINGS

 6) To make rings, take a dough ball and roll it into an oval shape.

 ROLL OUT THE BALL INTO THICK OVAL SHAPE PURI

 7) Now moisten the edges of this rolled poori with the help of a finger or by applying water with a brush, while spreading 2 spoons of stuffing.

 PLACE A LITTLE FILLING

 8) Now lifting the poori and folding it, make a big roll by moving it from one edge of the poori to the other with a light hand.

 MAKE THE ROLL TIGHTLY TILL THE END

 CLOSE THE RINGS LIKE A LONG ROLL & SEALING THE EDGES

 9) After rolling, tie both the sides together and make a ring like.

 TIE A KNOT AND SEAL THE ENDS BY PRESSING TIRMLY

 10) Similarly prepare the rest of the balls and stuffing by making raw spring onion rings by the method from step 6 to 9.

 MAKE ALL THE RAW GREEN ONION RING IN THE SAME WAY

 11) Now heat oil in a pan on medium heat for frying rings.  When the oil is medium hot, put 4-5 rings in it (more or less according to the size of the pan.) and reduce the flame of the gas.

 Deep fry rings until crunchy & golden brown

 KEEP THE FLAME ON MEDIUM- LOW AND FRY IT BECOMES GOLDEN BROWN BOTH SIDES

 12) Keeping the flame medium-low, fry the rings till they turn golden brown in color from both the sides.

 13) After frying the spring onion rings, take them out strictly and keep them on kitchen paper.

 14) Rings made of green onions are ready.  Now serve them hot with green coriander chutney and sweet tamarind chutney.

 Serve it with coriander & tamarind chutney

 PUT GREEN ONION RINGS IN A SERVING PLATE AND SERVE HOT WITH ANY GREEN CHUTNEY & SWEET TAMARIND CHUTNEY OR TOMTO KETCHUP

 suggestion

 Drain all the water from the green onion leaves before adding spices to the stuffing or else the rings may break.

 While frying the spring onion rings, do not keep the flame of the gas too high, otherwise the rings will turn brown from outside and remain raw from inside.
