Bhee (Lotus Stem / Kamal Kakdi), the root of the lotus is called. This root extends as much as 4 feet inside the water.  Lotus Stem is in the form of long stalk, it is easily available in the market.

     Lotus Stem is used as a food item. It is a favorite food for many people.  However, it is more health-promoting than its delicious taste. Lotus Stem benefits our body in many ways. Eating lotus Stem (bhee) increases the body’s immunity. It contains Vitamin B6, Vitamin A, Vitamin C,  Nutrients like minerals, potassium, magnesium, thiamine, zinc, are found in abundance.  Iron and copper are also found in good amounts in this. Along with this, it is a very important source of fiber and protein.

       Vitamin B complex pyridoxine is found in good quantity in lotus stem, which is considered very good for mental health.  Its consumption improves blood circulation, which helps in increasing the oxygen level of the body, as well as increases the energy level of the body.

     Problems like stones can also be cured by regular consumption of lotus cucumber. Due to the high amount of dietary fiber in it, it helps in controlling sugar, people who have sugar problem or whose family history of sugar disease  Yes, they should definitely consume lotus cucumber.

    Nutrients are very high in lotus cucumber but the amount of calories is very less.  Because of this, it gives the necessary energy to our body but does not allow fat to grow.

     It does not have any harmful effect. But even then it should never be eaten raw, eating it raw can spread parasitic or bacterial infection.

      Lotus Stem is known by different names,  in Hindi it is called Kamal Kakdi and in Kashmir it is called nadru and in Sindhi it is called bhee. Today we will make lotus cucumber curry in Sindhi style.  Which is made from onion and tomato gravy.

 Ingredients required to make Bhee Patata (Bhee Aloo) sabzi

 1) Lotus Stem (Kamal Kakdi) :- 250 grams

 2) Onion :- 200 grams

 3) Tomato :- 200 grams

 4) Potato :- 200 grams

 5) Green chili :- 2

 6) Green Coriander :- 2-3 tbsps (finely chopped)

 7) Red chili powder :- 1 tsp

 8) Coriander Powder :- 1 tsp

 9) Garam Masala Powder:- 1/2 tsp

 10) Salt :- 1 tsp (according to taste)

 11) Refined oil :- 1 tbsp

 12) Garlic ginger paste – 1 tsp

   (1 glass of hot water to clean the lotus cucumber + 1 glass of water to pour into the vegetable)

INSTRUCTION OF Lotus Stem-Potato Sabzi (Bhee Patata sabji)

 1) To make Bhee Aloo, first peel and wash the lotus stem well, then cut them into 1 inch diagonally pieces.

 2) Now wash these cut pieces thoroughly and clean them.  Then put them in boiled water and keep covered for 15 to 20 minutes. 

    3) Peel and wash the onion and cut it into long pieces.  Then cut the tomato into small pieces as well.  Cut the potatoes into small pieces.  And also finely chop green chilies.  In this way, prepare all the vegetables by chopping them.

 4) Now remove the lotus stem from the water and wash it once again with clean water.  (If you still feel that there is soil in the holes of the lotus stem, then clean it with a toothpick.)

 5) Now put the pressure cooker on the gas for heating, add oil to it, when the oil is hot, add garlic ginger paste, then add long chopped onions, stir fry the onions till they become light pink.

 6) When the onion becomes light pink, then add chopped lotus stem (bhee) to it, add 2 tablespoons of water and close the lid of the cooker, let it cook on high flame till one whistle comes, then reduce the flame to low, and Let it cook for 4-5 minutes then turn off the gas.

 7) Open the lid when the cooker comes out and again put the cooker on the gas, then add chopped tomatoes and chopped potato pieces, also add chopped green chilies, then stir the vegetable well and cook it for 3 to 4 minutes.  

 8) After 4 minutes, reduce the flame of the gas and add salt, coriander powder, red chili powder and cook the vegetable continuously for 5 to 6 minutes.

 9) When oil starts floating on the vegetable, then add 1 glass of water to it, then put garam masala powder and green coriander in it and close the lid of the cooker. Now put the gas on medium flame and let it cook till 2 whistles come, then on the low flame cook for 3 to 4 minutes.  Switch off the gas after 4 minutes.

 10) Unlocked release the excess steam and remove the lid and check the lotus cucumber by pressing it by hand, if it breaks by pressing with the hand i.e. the lotus stem is cooked well and also check the consistency of the gravy.

 11) Now put this prepared vegetable in a serving plate and garnish it with some green coriander leaves.

   Sindhi Bhee Aloo ki Sabzi is ready to serve.  Serve it hot with hot plain rice.

HOW TO MAKE SINDHI BHEE PATATA – STEP BY STEP WITH PICTURES

 1) To make Bhee Aloo, first peel and wash the lotus stem well, then cut them into 1 inch diagonally pieces.

 2) Now wash these cut pieces thoroughly and clean them.  Then put them in boiled water and keep covered for 15 to 20 minutes.

KEEP IT INTO BOILED WATER FOR 15 TO 20 MINUTES

    3) Peel and wash the onion and cut it into long pieces.  Then cut the tomato into small pieces as well.  Cut the potatoes into small pieces.  And also finely chop green chilies.  In this way, prepare all the vegetables by chopping them.

CUT THE ONIONS, TOMATOES, POTATOES & GREEN CHILLIES

 4) Now remove the lotus stem from the water and wash it once again with clean water.  (If you still feel that there is soil in the holes of the lotus stem, then clean it with a toothpick.)

 SEPARATE THE LOTUS STEM FROM THE WATER

 5) Now put the pressure cooker on the gas for heating, add oil to it, when the oil is hot, add garlic ginger paste, then add long chopped onions, stir fry the onions till they become light pink.

SAUTE THE ONIONS TILL TURN LIGHT PINK ON A MEDIUM FLAME 

 6) When the onion becomes light pink, then add chopped lotus stem (bhee) to it, add 2 tablespoons of water and close the lid of the cooker, let it cook on high flame till one whistle comes, then reduce the flame to low, and Let it cook for 4-5 minutes then turn off the gas.

 7) Open the lid when the cooker comes out and again put the cooker on the gas, then add chopped tomatoes and chopped potato pieces, also add chopped green chilies, then stir the vegetable well and cook it for 3 to 4 minutes.

ADD THE CHOPPED TOMATOES & POTATO PIECES

 8) After 4 minutes, reduce the flame of the gas and add salt, coriander powder, red chili powder and cook the vegetable continuously for 5 to 6 minutes.

ADD THE DRY SPICES 

 9) When oil starts floating on the vegetable, then add 1 glass of water to it, then put garam masala powder and green coriander in it and close the lid of the cooker. Now put the gas on medium flame and let it cook till 2 whistles come, then on the low flame cook for 3 to 4 minutes.  Switch off the gas after 4 minutes.

ADD THE WATER WHEN THE OIL STARTS FLOATING ON THE SABZI

 10) Unlocked release the excess steam and open the lid and check the lotus Stem by pressing it by hand, if it breaks by pressing with the hand i.e. the lotus stem is cooked well and also check the consistency of the gravy. (Allow the steam to escape before opening the lid.)

 11) Now put this prepared vegetable in a serving plate and garnish it with some green coriander leaves.

 suggestion :-

While buying lotus cucumber, keep in mind that it should be white in appearance and a little thick in size. If the lotus cucumber is thin then it will not cook quickly and will not taste good either.  If possible, both the sides of the lotus stem should be sealed, so that no dirt will go into the lotus stem.

 4) After the vegetable is cooked, take special care that the lotus stem should be cooked well, if there is a little rawness in it, then according to the need, apply 1 or 2 whistles of the cooker.
